Green leaf serving of mixed greens with lime and macadamia dressing

Broadly viewed as one of the most beneficial palatable oils, macadamia oil contains abnormal amounts of monounsaturated unsaturated fats, which are imperative in bringing down blood cholesterol.

Ingredients


  • 1 teaspoon finely grated lime rind
  • 2 tablespoons lime juice
  • 1/3 cup (80ml) macadamia oil
  • 1/2 teaspoon caster sugar
  • 250g mesclun salad leaves
  • 1/3 cup (45g) toasted macadamias, coarsely chopped

Method

  • Combine the lime rind and juice, oil and sugar in a small jug. Taste and season with salt and pepper.
  • Place the salad leaves and half the macadamias in a large bowl. Drizzle with dressing and gently toss to combine. Sprinkle with remaining macadamias and serve immediately.
