Broadly viewed as one of the most beneficial palatable oils, macadamia oil contains abnormal amounts of monounsaturated unsaturated fats, which are imperative in bringing down blood cholesterol.
Ingredients
- 1 teaspoon finely grated lime rind
- 2 tablespoons lime juice
- 1/3 cup (80ml) macadamia oil
- 1/2 teaspoon caster sugar
- 250g mesclun salad leaves
- 1/3 cup (45g) toasted macadamias, coarsely chopped
Method
- Combine the lime rind and juice, oil and sugar in a small jug. Taste and season with salt and pepper.
- Place the salad leaves and half the macadamias in a large bowl. Drizzle with dressing and gently toss to combine. Sprinkle with remaining macadamias and serve immediately.
